This recipe is a new favorite even my kids love it and it's easy!
Ingredients
7 medium size zucchini or squash ( slice long ways down the middle and use a spoon to scoop out the insides. )
1/2 yellow or white onion ( finely diced )
1 can mild diced green chilis
1 can corn
1 can olives ( sliced )
1 pack raw bratwursts ( cut out of the casings )
1/3 cup cream cheese
1/3 cup sour cream
1/2 cup shredded cheese ( your choice )
2 packets of Sazon Goya coriander & achiote
1 can of green enchilada sauce
preheat over to 375 degrees
In a large skillet add the onion and bratwurst and cook until well browned. Add in the Sazon Goya packets, green chilis, corn, and olives and simmer for about 5 minutes.
Once the meat mixture has simmered add in the cream cheese, sour cream, and shredded cheese. Stir well and then remove from heat.
In a large baking dish add about 3/4 a cup of enchilada sauce to the bottom and then place the zucchini cut side up ontop of the sauce. Spoon your meat mixture into the boats. Drizzle more enchilada sauce ontop of the boats and then sprinkle with cheese.
Bake your boats for about 30 minutes until browned and bubbly. Enjoy!
( My kids like it when I chop up the boats and serve it to them with chips. )
