Get ready for the best and easiest oatmeal cookies you've ever had!
Preheat your oven to 350 Degrees
Ingredients
- 1 cup of room temp butter ( cubed)
- 3 cups of rolled oats
- 1 cup of brown sugar
- 1/4 cup white sugar
- 1 Tsp cinnamon
- 1/2 Tsp salt
- 1 & 1/2 level cups of flour
- 1 cup of raisins
- 1 Tbs molasses
- 1 Tbs vanilla extract
- 1 Tsp baking soda
- 2 large eggs
In a large bowl combine flour, salt, cinnamon, baking soda, both sugars, and butter. Mix well until it has a crumbly consistency. Once you've gotten it to the right consistency add in the rolled oats, raisins, eggs, molasses, and vanilla. Then, mix until you get a nice sticky dough.
You'll want to use either a cookie sheet or a silicone baking mat like the one I use ( https://amzn.to/42F56VM ) I find they are easier to get off of the silicone mat than a cookie sheet and you wont need any oil on it.
Roll the dough into about 1 inch balls and place on the baking sheet about 1 & 1/2 inches apart. Bake the cookies for 12 - 16 minutes or until lightly golden on the edges and golden on the bottom. Use a spatula to take them off the baking sheet immediately and place on a cooling rack. These are my favorite cooling racks - https://amzn.to/43CZrB1
